Apricot and Fresh Green Almond Yogurt Bowl

A vibrant celebration of the season’s first harvest, this bowl pairs creamy yogurt with thinly sliced stage 3 green almonds—tender young almonds just beginning to form their soft inner shell. At this stage, the outer hull is still fresh and slightly tart, while the inside offers a delicate, subtly nutty crunch.

Folded into thick Greek yogurt, the green almonds add a bright, almost citrusy snap that balances the yogurt’s richness. A drizzle of wildflower honey enhances their natural sweetness, while a sprinkle of flaky sea salt and a touch of lemon zest elevate their fresh, garden-forward flavor. Finished with a handful of fresh herbs like mint or a scatter of seasonal berries, this simple bowl feels both nourishing and refined—an effortless way to showcase a fleeting spring ingredient.

Ingredients:

Green almonds (Stage 3), chilled, washed

Greek yogurt

Raspberry jam

Fresh apricot, chopped coarsely

Instructions:

  1. Split open the green almonds reserving the nutlets inside.
  2. Place some Greek yogurt into a serving bowl.  Top with a spoonful of raspberry jam and the chopped apricot.  Garnish with fresh green almonds.
